Brunello di Montalcino dog Rabissi

Brunello, Rosso di Montalcino and extra virgin olive oil, three products, one family, zero frills. The perfect essentiality of Tuscan style.

Brunello di Montalcino, Rosso di Montalcino and extra virgin olive oil: the Rabissi family focuses on excellent productions. Just a few words to describe an intimate production: 3.000 bottles, one hectar of vineyards. Spurred cordon growth vines, harvest done by hand to select the best grapes only, those ones arrived at perfect maturation. The grapes coming from the oldest vines are intended to become Brunello di Montalcino; those ones of the vines planted in 1982, going towards a fermentation in red of 15-20 days at a temperature of 26-28°C. Then the wine matures for at least 2 years in small oak barrels and tonneaux. After the bottling, the wine refines in glass for a minimum of 4 months.

The expression of a territory

The Rabissi family chooses parsimony for its own Rosso di Montalcino: a production that we could define as private. Only the best grape comes to the cellar, selected and harvested by hand.

The extra virgin olive oil

Leccino, Moraiolo, Pendolino and Olivastra, these are the varieties selected over the years by the Rabissi family. Adapting them to different small land plots, different for exposure and altitude. The olives are harvested by hand and immediately crushed with cold pressing. They allow to obtain a mild and complex olive oil at the same time, that accompanies the dishes and enhances the flavors.
